Skewer that! Greek Chicken Souvlaki

Souvaki is a popular Greek fast food consisting of small pieces of meat and sometimes vegetables grilled on a skewer. It is usually eaten straight off the skewer while still hot. This version of chicken souvlaki is best served with tzasiki.

Marinade

  • 10 cloves garlic peeled
  • 2 tbsp dried oregano
  • 1 tsp dried rosemary
  • 1 tsp sweet paprika
  • 1 tsp salt
  • 1tsp pepper
  • ¼ cup extra virgin olive oil
  • ¼ cup dry white wine
  • Juice of 1 lemon
  • 4-5 Bay leaves

Chicken

  • 1 kg boneless, skinless chicken breast cut into 1” cubes

For Grilling

  • Wooden skewers soaked in water
  • Reserved marinade

Method

Blend all ingredients for the marinade, except for the bay leaves. Place the chicken in a large bowl. Pour the marinade over. Add the bay leaves and combine well. Cover tightly and refrigerate for at least 2 hours. I recommend overnight. Thread pieces of chicken on to the skewers. Reserve the marinade. Grill the chicken on a griddle. Turn skewers and keep brushing with reserved marinade. Transfer on to a serving dish and let it rest for a few minutes. Serve with tzatziki, Turkish bread, lemon rice, and other Greek side dishes.
