Controlling my carb intake, I found it best to add an evening snack to my daily meal plan. Here is a super simple snack recipe for two.
Ingredients
- 4 slices French baguette
- 2 tbsp mayonaise
- 2 rashes bacon crisped and crumbled
- 2 tbsp toasted almond flakes
- 1/4 cup grated cheddar
- 1 green chili thinly sliced
- 1 small shallot finely chopped
Method
Reserving some almond flakes for serving later, mix them well with the mayo, cheese, green chili and onion. toast he slices of baguette in the pan where the bacon was cooked. top will the cheese mix and place under a grill till the cheese melts.
