A Time to Heal

There is a time for everything,

Dawn of 2023 has meant a time to slow down on my love for food. It hasn’t been an easy fact to accept, but sucks as it might, I’ve had to cut back on enjoying the many delights of carbs and sugars. Let’s be honest them things are mighty tasty and wonderful! But there comes a time when one has to make a choice. I am calling this a time to heal. Ok so I’m not giving them up completely, just cutting back for the time being. So in order to lower my FBS, I’ve been experimenting on having soups and salads for dinner. Here is the recipe for one of them that turned out surprisingly well. Studies have shown that rocket or arugula have many health benefits including preventing/controlling type 2 diabetes.

Ham and Rocket Salad

Ingredients

  • 100 g Rocket (Arugula)
  • 100g Prosciutto slices
  • 100g mixed cherry tomatoes halved
  • 100g baby mozzarella balls (or feta cubes if unavailable) drained.

Dressing

  • ¼ cup extra virgin olive oil
  • 1 tbsp white vinegar
  • 1 tsp Dijon mustard
  • ½ tsp honey
  • Salt and freshly ground pepper
  • 1 shallot finely chopped

Method

Shake together dressing ingredients in an empty jar. Arrange rocket leaves, ham, tomatoes, and cheese on serving plates. Spoon over the dressing.
